Chicken Fajita Soup
One of my favorite types of recipes to make ahead of time for the week is soup. This Chicken Fajita soup found in the Trim Healthy Table cookbook is delicious! I make my own chicken broth. I roast a chicken and then simmer the carcass with pieces of leftover vegetables. This way I can control the sodium content too.
This soup was just one of the delicious recipes in the cookbook! I found that the recipes on the Trim Healthy Mama plan use a lot of ingredients I would use on a daily basis in my home. Ingredients that are easy to find, versatile and most importantly, affordable! Many of my friends and readers tell me they don’t like trying new recipes because they don’t keep the ingredients in their home. Many of the recipes call for ingredients like frozen veggies, eggs and egg whites, all of which I buy on almost every shopping trip and my local stores carry great deals on, on a weekly basis.
