Sweet Corn Vegetable Flatbread Recipe
One of my kid’s favorite dinners is making their own pizzas. I use flatbreads! It makes it so much easier for them to each make their own unique, delicious meal! I made these Sweet Corn Vegetable Flatbread for myself for dinner and to my surprise I had to share with the kids!
We get so sad at the end of the summer when we see the last of the corn harvest at our local farms. I am so happy that Sunshine Sweet Corn that is grown in Florida can be found at my local retailers!
One of my new favorite recipes is this delicious Sweet Corn Vegetable Flatbread that Sunshine Sweet Corn created.
Sweet Corn Vegetable Flatbread
- 1/2 cups grated Parmesan Cheese
- ¼ cup roasted garlic
- 1 cups Florida corn
- 1 zucchini sliced thin in circles
- 1/2 cup grape tomatoes halved
- 2 flatbreads
- extra virgin olive oil
Pre-heat the oven to 450 degrees F. Lay out the flatbreads and sprinkle the corn, layer the zucchini and tomatoes. Drizzle with olive oil and parmesan cheese, then place in the oven and bake until crispy. Cut the flatbreads into 10 pieces and the top with additional cheese, salt and pepper.
