How to Make Eggs Benedict in Muffin Cups

Ingredients

  • 1.5 lemons, juiced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • dash of hot sauce
  • dash of salt and black pepper
  • 1 tablespoon dijon mustard, or to taste
  • 1/4 teaspoon ground paprika
  • The recipe calls for Large Eggs, Thick Canadian bacon, crispy bacon and English Muffins to make the Eggs Benedict.

Spray your large muffin tin with nonstick cooking spray.

Add 1 tablespoon of water to each muffin cup and crack an egg directly into each hole.

Bake for a total time of 10 minutes at 350 degrees.

Keep an eye on the eggs to avoid overcooking, they should have runny yolks. 

In a small saucepan, whisk together your ingredients over low heat until the Hollandaise gets heated through.

Cook bacon. Pat excess grease with a paper towel.

Toast muffin halves until golden brown and spread melted butter on top.

Remove egg cups with a slotted spoon and serve immediately on top of the toasted english muffin with a slice of ham or bacon.

Spoon Hollandaise sauce over eggs. Garnish with chopped fresh chives.

The Hollandaise Sauce makes enough for about 12 eggs Benedict halves.

  • hollandaise sauce - see my mock recipe below
  • chives (optional)
  • For the Easy Mock Hollandaise Sauce
  • * 1.5 lemons, juiced
  • * 1/2 cup mayonnaise
  • * 1/2 cup sour cream
  • * dash of hot sauce
  • * dash of salt
  • * 1 tablespoon mustard, or to taste
  • * 1/4 teaspoon ground paprika

Instructions

    1. Preheat your oven to 350.

    2. Spray your muffin tin with non-stick spray.

    3. Add 1 tbsp water to each muffin tin and crack egg directly into each hole.

    4. Bake for 10 minutes.

    5. Remove egg with slotted spoon and serve immediately.

    6. Fry the canadian bacon in a skillet.

    7. For the Hollandaise Sauce, in a small saucepan, whisk together your ingredients over low heat until heated through.

    8. Spoon your hollandaise sauce over the eggs benedict.

Thanks for this post. Eggs Benedict is my favorite brunch food too but I never attempted to make it at home because I don't like to poach eggs--all that chasing the white around the water in the pan and trying to keep it together is too much for me. But I am totally going to try making them in the oven!

I have never made poached eggs in the oven before! That would definitely be easier than the batches I do. My husband LOVES Eggs Benedict.
