Ingredients 

Pancake Mix

Pancake mix is a great base for making biscuits because it already contains essential dry ingredients like flour, leavening agents, and often a touch of sweetness. This means you can skip the step of measuring and mixing these ingredients separately, saving you time and effort. Additionally, the inclusion of buttermilk in pancake mix adds a tangy flavor and tender texture to the biscuits, making them even more delicious.

When making biscuits out of pancake mix, milk adds moisture to the dough, creating a tender and soft texture. As well as activates the leavening agents in the pancake mix, which creates a light and fluffy texture as the biscuits bake. 

Butter

Brushing butter on top of the biscuits after baking creates a glossy shine, making them look more appetizing and the slight richness and buttery flavor from the brushed butter gives a more satisfying and indulgent element to each bite.

Instructions

Line a sheet pan with parchment paper and pre heat oven to 400 degrees.

In a large mixing bowl, combine baking mix and milk using a wooden spoon, until a rough dough forms.

On a work surface, sprinkle more pancake mix.

Transfer dough to the floured surface and knead the dough lightly about 10-12 times.

Roll out the dough to a 1/2 inch thickness.

Using a biscuit cutter, cut out biscuits and drop biscuits onto your baking sheet.

Bake for 10-12 minutes in a preheated oven until your biscuit dough turns golden brown.

Once the biscuits are baked, brush the tops with melted butter for a glossy finish and a deliciously golden crust. This step adds extra flavor and moisture to the biscuits.

  • 2 1/4 cup Krusteaz Buttermilk Pancake Mix
  • 2/3 cup milk
  • 2 tbsp butter, melted

My biscuits came out very flat! The taste was a little different but not bad! Ok if you're in a pinch for time and craving biscuits!

Your mix probably wasn't fresh, that will effect the leavening ingredients.

I made these exactly to recipe using the giant bag of Krusteaz I have from Costco and they only rose as high as when I rolled them out. 🤷🏼‍♀️

I came back from college to find bags of pancake mix in my house of non-pancake eaters (we favor waffles). I found this recipe while looking for what to do with it. It was my first time baking, boy, was I worried! My dad suggested we add peanut butter to the mix and it came out so well!

I think they are fine as they are, or if you want to add a touch more of sweetness 1/4 cup of sugar should be fine.

Made these because I had some extra buttermilk on hand and they're delicious! Split them in half, buttered them and added a bit of preserves. Perfect little addition to breakfast :)
