Lingonberry Lamb Pops
A couple of years ago I attended a menu preview at a local restaurant. One of the items on the menu was lamp lollipops. I remember this because it was the first time I had lamb in decades and it completely changed the way I thought about enjoying it.
The majority of the recipes I create are thought of in the middle of the night when I should be sleeping. I had been racking my brain trying to think of something a little bit different to make with the delicious Felix Lingonberry Jam that I received on the Mom Blog Tour at the Summer Fancy Food Show this past summer. Just like that my thoughts of the long ago lamb lollipops melded with the Felix Lingonberry Jam conundrum and I ended up with these Lingonberry Lamb Pops.
I had never heard of the Lingonberry prior to the Mom Blog Tour. One of our favorite things to do as a family is to go berry picking here in New Jersey, so I was really intrigued to hear about how in Sweden the Swedes pick their own Lingonberries. Felix Lingonberries is the leading lingonberry jam in Sweden and the USA for over 50 years.
Felix Jam is made with fresh wild berries with no artificial ingredients or preservatives. The Dr. Oz TV show has recommended the jam as a super fruit, loaded with antioxidants. In 2016, it was a winner of a National Parenting Products Award (NAPPA).
Lingonberry Lamb Pops
- 2 tablespoons finely chopped fresh thyme
- 2 tablespoons finely chopped fresh parsley
- 1 teaspoon minced fresh rosemary
- 2 teaspoons Dijon mustard
- 1 large garlic clove minced
- 5 tablespoon red wine vinegar
- 6-8 lamb ribs
- 1/3 cup Felix Lingonberry Jam
Preheat oven to 400 degrees
Combine first 5 ingredients, mix in 1 tbsp vinegar
Sprinkle lamb with salt and pepper on both sides.
In an oven proof pan on medium-high heat, sear lamb for about 2 minutes on each side, until browned.
Remove each piece of lamb and coat with the thyme mixture and return to the pan.
Place the pan in the preheat oven and bake for about 15 minutes.
A meat thermometer should be 138 degrees.
Let the pan rest for about 10 minutes.
Over medium high heat, add remaining vinegar and bring to a boil. Stir in salt and pepper to taste.
Add Felix Lingonberry Jam and let the sauce cook for about a minute.
Serve the sauce over the lamb pops.
