For Mom: Delicious Breakfast Bowl
I find that once back to school begins, I am running around and often forget to eat. I try to make quick and nutritious breakfast options that don’t leave me ravenous later on in the day.
One of my favorites is a delicious breakfast bowl. Forget the plate and throw all of your favorites in a big bowl! Right now, I am enjoying baby spinach, sweet potatoes, avocados and eggs.
- 2 cups baby spinach
- 2 eggs
- ½ ripe avocado
- 1 sweet potato, diced
- Dice and roast sweet potatoes for about 30 minutes at 350 degrees.
- Wilt spinach on the stovetop with olive oil.
- Fry eggs.
- Mash avocado.
- Add all ingredients to a bowl.
Save time by cooking up a big batch of sweet potatoes and spinach ahead of time to enjoy all week.
It’s perfect timing too since September is National Breakfast Month and what better way to celebrate than with eggs! Not only are eggs versatile, lending themselves to a variety of creative recipes, but they are also a delicious source of protein. When choosing your eggs, it’s important to pick an option that’s good for you, your family, and the hens. A standard you can trust? Certified Humane Free Range. I’m using Pete and Gerry’s Organic Eggs for this recipe.
