  • Any of your favorite pancake mix ins

Preheat your oven to 350° F.

Prepare your 12-cup muffin pan with cupcake liners or spray with non-stick cooking spray.

In a large bowl, combine pancake mix, a little bit of milk, egg, and vanilla extract until everything is combined.

Let your batter stand for a minute or two. 

Use a cookie scoop or spoon to portion out the batter into the greased muffin cups. Fill each cup about 2/3 full.

Made 12 of these today, 3 with blueberries 3 with sprinkles, and 6 with chocolate chips. My new kids (5 and 6) ate ALL OF THEM! My son has requested I make a HUGE batch on Sunday so he can take them for lunch during the week too.

@momma lew, mine all the chocolate chip sunk to the bottom so I need to add more pancake mix to it it was very runny idk tasted good though just want the chocolate chips in the mix of the muffin

I understand the point of using Bisquick batter and not needing sugar. I was just trying to follow the recipe instructions and then became confused on the sugar being added in. I was like wait what? LOL.
