  • Wash and dry with paper towels. 
  • Start by trimming the stem end of each Brussels sprout with a sharp knife. Remove any loose or damaged outer leaves.
  • Cut each Brussels sprout in half vertically from the stem end to the top. This will create two equal halves.
  • Place the flat side of each halved Brussels sprout on the cutting board, and use your chef’s knife to slice them as thinly as possible. Aim for fine, delicate ribbons.
  • Continue slicing the remaining halved Brussels sprouts in the same manner. You can work in batches to make the process more manageable.
  • As you finish slicing each batch, transfer the shredded Brussels sprouts to a bowl. You can use them immediately in your recipe or store them in an airtight container in the refrigerator for later use.

How to Cook Brussel Sprouts in the Oven

  • 1 lb brussel sprouts, shredded or thinly sliced
  • 6 pieces chopped bacon, uncooked
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar or balsamic glaze

Instructions 

Preheat the oven to 350 degrees. After rinsing, shred your brussel sprouts. If you have a shredding blade for a food processor, you could use that as well or even a box grater. If you have none of those, no problem, just use a knife. Be sure to cut all of the whole sprouts into a similar size.

In a bowl, toss the sliced Brussels sprouts with a little olive oil, balsamic vinegar, salt, and pepper and uncooked diced bacon.
