Sausage and Kale Ragu with Butternut Squash noodles
A must have in every kitchen is Ali Maffucci’s Inspiralized cookbook and an inspiralizer! I am enjoying using my inspiralizer to make fresh noodles out of zucchini, beets, squash and more. Have you tried Zoodles yet? They are my favorite!
Zoodles may end up being pushed aside though for these delicious Butternut Squash noodles! I have to share this amazing recipe for Sausage and Kale Ragu with Butternut Squash noodles.
Sausage and Kale Ragu with Butternut Squash Noodles
- 1 lb Italian Sausage crumbled
- 1 diced small onion
- 2 diced garlic cloves
- 1 can Tuttorosso No Salt Added Peeled Plum Italian Style Tomatoes
- 1 1/2 tbsp Tuttorosso Tomato Paste
- 1/4 red wine
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 bay leaf
- salt and pepper to taste
- 4 cups chopped kale
- 2 medium butternut squash peeled
Preheat oven to 400 degrees
Crumble and brown sausage in a large pot over medium heat, about 10 minutes.
Add onions and garlic and cook until the onions turned translucent, about 2-3 minutes.
Crush tomatoes over the sausage with your hands. Use a wooden spoon to further crush the tomatoes.
Add paste, wine, basil, oregano, bay leaf, salt and pepper.
Bring to a boil over medium-high heat and then reduce to a simmer over low heat.
Simmer for 30-35 minutes until sauce thickens.
Add kale and cook for 5 minutes or until the kale wilts.
Spiralize your squash.
Like a baking sheet with parchment paper and lay out noodles.
Drizzle with olive oil, salt and pepper and massage into noodles.
Roast for 8-10 minutes.
