All-Purpose Mini Muffin Mix Recipe
That’s the sound you are bound to hear when my son sees that I made him some of his favorite treats – mini muffins.
Now that he is getting older, I thought I’d let HIM bake ’em up this time around!
I love this recipe because it is so versatile! Whip up the batter and then add in your favorite mix-in’s!
- 3/4 cup milk,
- 1/4 cup vegetable oil,
- 1 large egg,
- 2 cups all-purpose flour,
- 1/2 cup sugar,
- 2 tsp baking powder,
- 1/2 tsp salt.
I then like to separate the mix into 2 bowls, so that we can do some blue berry (1 cup) and some chocolate chip (1/2 cup miniature)! Spoon into a prepared muffin tin:
Preheat the oven to 400 degrees and bake for approximately 15-20 minutes, or until the muffins are golden brown.
