Gluten-Free Lemon Pound Cake
One thing I miss the most about living gluten-free is having baked goods readily available. Of course, this has been great for my waist line, but I have such a sweet tooth! I love pound cake! I’ve been longing for gluten-free pound cake with the same consistency that I would find in my favorite Starbucks Lemon Loaf.
Well, I have found it!
Pound cakes are a very simple recipe, even for the most inexperienced baker.
- 1 cup Almond Meal Flour – if you are allergic to almonds, use coconut flour!
- 1 cup Gluten-Free All-Purpose Flour
- 1 tsp Xanthan Gum
- 1 tsp salt
- 1 tsp baking powder
- 3/4 cup canola or vegetable oil
- 1 cup sugar
- 1 tbsp lemon extract
- 2 tbsp vanilla extract
- 3 eggs
- 2/3 cup milk
