My daughter is an icing fiend.
So she has been begging me to make cupcakes.
I love Red Velvet cupcakes, but guess what? I had no more red food coloring! So I the kids said green was Christmasy enough and there you have it!
I also love a recipe that starts with a box cake mix. Bottom line? Don’t mess with Betty! She has the recipe down lock and key, so if I don’t have to start measuring and sifting, it’s great!
1 box chocolate cake mix
1 cup milk
1/2 cup vegetable oil
2 tbsp cocoa powder – I like Hershey’s the best
2 tbsp red or green food coloring depending on your preference that day
Preheat oven to 350 degrees,
Mix all of your ingredients together,
Line your cupcake tins with liners and pour 1/3 cup of cupcake mix in,
Bake for 15-18 minutes until a toothpick comes out clean through the center of a cupcake.
Let them completely cool and then ice.
The cream cheese frosting recipe I use is the same that I use in my Pumpkin Roll:
1 8oz pkg of cream cheese at room temperature,
1 cup powdered sugar,
6 tbsp softened butter,
1tsp vanilla extract
Beat ingredients until smooth. Frost your cupcakes after taking a sneak taste because how can you resist?!
