In my quest to live a gluten-free life, I am mourning baked goods. I found this recipe from Fit & Fresh and I thought it was perfect! I changed it up to suit my own needs and even the kids enjoyed it!
PALEO CAKE
- 2 mashed bananas
- 1/4c honey
- 3 eggs
- 1/4c melted coconut oil
- 1 tsp vanilla extract
- 1c almond flour
- 2tsp baking powder
- 1/2c dark chocolate chips
- 1/2c shredded all-natural (unsweetened) coconut flakes
- 1/4c chocolate chips and 1tsbp of coconut oil for the topping

It sounds and looks delicious but I could do without the coconut flakes, not a big fan of those.
Looks delicious. I am not a big fan of coconut, but this I would have to try.
I’ll be honest, I love coconut, but I felt like it really didn’t add anything that WOW’d this cake. You could totally do without it!
This sounds yummy… can i ask where you find the unsweetened coconut flakes? We can’t seem to find them anywhere.
I find them at my local produce market, by the packages of nuts & trail mixes & dried fruits.
I have switched to using coconut oil for everything. So many people think that it tasted like coconut but it doesn’t. Now sunflower oil….that tastes like sunflower seeds. lol
A great way to use the over-ripe bananas I have sitting in the kitchen. 🙂
