Paleo Cake – Recipe

In my quest to live a gluten-free life, I am mourning baked goods.  I found this recipe from Fit & Fresh and I thought it was perfect!  I changed it up to suit my own needs and even the kids enjoyed it!

PALEO CAKE

Ingredients:

  • 2 mashed bananas
  • 1/4c honey 
  • 3 eggs 
  • 1/4c melted coconut oil 
  • 1 tsp vanilla extract 
  • 1c almond flour 
  • 2tsp baking powder 
  • 1/2c dark chocolate chips 
  • 1/2c shredded all-natural (unsweetened) coconut flakes
  • 1/4c chocolate chips and 1tsbp of coconut oil for the topping

Heat the oven to 325 degrees.  
I did this part in my blender – blend bananas, eggs, honey, coconut oil, and vanilla until it is a smooth consistency.  Add in a bowl to the dry ingredients.  Fold in the chocolate and coconut.  I baked mine in a bundt pan because I just love bundt pan cakes!  Bake for 25-30 minutes.  Melt the additional chocolate and oil in the microwave for about 30 seconds and pour on top of your cake.

    It sounds and looks delicious but I could do without the coconut flakes, not a big fan of those.

    I’ll be honest, I love coconut, but I felt like it really didn’t add anything that WOW’d this cake. You could totally do without it!

    This sounds yummy… can i ask where you find the unsweetened coconut flakes? We can’t seem to find them anywhere.

      I find them at my local produce market, by the packages of nuts & trail mixes & dried fruits.

    I have switched to using coconut oil for everything. So many people think that it tasted like coconut but it doesn’t. Now sunflower oil….that tastes like sunflower seeds. lol
